Sweet Milk Coconut Cake

Ingredients

  • 5 eggs
  • 1 1/4 cups (150g) sugar
  • 1 1/4 cups (150g) all-purpose flour
  • 1 1/4 cups (300g) Sweetened Condensed Milk
  • 2 1/2 cups (300g) Fresh Coconut
  • For soaking: 1 cup milk with 3 tbsp condensed milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
  2. In a large mixing bowl, beat the eggs and sugar until creamy and pale.
  3. Gradually add the flour, mixing until well combined.
  4. Gently fold in the sweetened condensed milk and fresh coconut until evenly distributed.
  5. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  6. Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. While the cake is still warm, poke holes all over the top using a fork or skewer.
  8. Mix the milk and condensed milk together, then pour it over the warm cake, allowing it to soak in.
  9. Let the cake cool completely before serving. Enjoy your delicious sweet milk and fresh coconut cake!
