Sweet Milk Coconut Cake
Ingredients
- 5 eggs
- 1 1/4 cups (150g) sugar
- 1 1/4 cups (150g) all-purpose flour
- 1 1/4 cups (300g) Sweetened Condensed Milk
- 2 1/2 cups (300g) Fresh Coconut
- For soaking: 1 cup milk with 3 tbsp condensed milk
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a round cake pan.
- In a large mixing bowl, beat the eggs and sugar until creamy and pale.
- Gradually add the flour, mixing until well combined.
- Gently fold in the sweetened condensed milk and fresh coconut until evenly distributed.
- Pour the batter into the prepared cake pan and smooth the top with a spatula.
- Bake in the preheated oven for about 30-35 minutes or until a toothpick inserted into the center comes out clean.
- While the cake is still warm, poke holes all over the top using a fork or skewer.
- Mix the milk and condensed milk together, then pour it over the warm cake, allowing it to soak in.
- Let the cake cool completely before serving. Enjoy your delicious sweet milk and fresh coconut cake!
