Ingredients

  • 9 separated eggs
  • 1 1/2 cups (300g) sugar
  • 9 tablespoons water
  • 1 3/4 cups (230g) all-purpose flour
  • 1/2 cup (70g) cornstarch
  • 1 packet baking powder
  • 2 tablespoons oil

Instructions

    Begin by separating the eggs. In a mixing bowl, beat the egg whites with sugar until fluffy, about 8 minutes.
    In another bowl, whisk together the egg yolks with water, then gently fold them into the egg white mixture.
    In a separate bowl, sift together the dry ingredients: flour, cornstarch, and baking powder. Gradually add them to the egg mixture, folding gently until just combined.
    Pour in the oil and fold it into the batter.
    Transfer the batter into a 9-inch (22cm) tall cake ring, spreading it evenly.
    Bake in a preheated oven at 320°F (160°C) for about 45 minutes, or until a toothpick inserted into the center comes out clean. Don't forget to perform the toothpick test.
