Quick Mandarin Cake ~ 5-Minute Cake

For the Cream:

  • 2 1/2 cups heavy cream (600ml)
  • 2 packets vanilla sugar
  • 2 tablespoons Sanapart (stabilizer for whipped cream)
  • 8.8 oz mascarpone (200g)
  • 3.5 oz cream cheese (100g)
  • 1 cup powdered sugar (120g)
  • 2 cans mandarins

Combine all the cream ingredients except the mandarins in a bowl and mix until creamy. Set aside a bit of the cream for later. Add the mandarins and gently fold them in.


  • 2 packets wafers
  • Milk for soaking

Soak wafers in milk and place them on a tray. Secure them in a springform pan. Spread half of the cream. Soak more wafers in milk and place them. Spread the remaining cream on top. Decorate with the reserved white cream and mandarins. Chill for at least 4 hours. Super delicious, perfect for warm days!
