Apple and Cinnamon Cake

Ingredients

  • 3 cups (375g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon grated nutmeg
  • 1 1/4 cups (300g) sunflower oil
  • 1/2 cup (120g) sour cream
  • 3 large eggs
  • 1 tablespoon (15g) vanilla extract
  • 1 cup (200g) brown sugar
  • 1/2 cup (100g) granulated sugar
  • 2 Granny Smith apples

Instructions

  1. Preheat your oven to 302°F (150°C).
  2. In a bowl, mix together the dry ingredients like flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, whisk the wet ingredients such as oil, sour cream, eggs, vanilla, brown sugar, and granulated sugar. Add the dry ingredients to the wet ingredients in 2 parts, gently stirring with a whisk to avoid lumps.
  4. Peel and dice the apples. Fold the apples into the batter using a spatula, making gentle and sweeping movements. Avoid overmixing.
  5. Pour the batter into a greased and floured pan. Bake for 1 hour and 15 minutes or until a toothpick inserted comes out clean. The baking time may vary depending on your oven, the size of the pan, and the amount of apples used, so keep an eye on the cake after 50 minutes.
  6. Decorate as you like and enjoy!
