Strawberry Sacher Cake

Ingredients

  • 420g Sweet Potato
  • 6 Eggs
  • 20g Yeast or 10g yeast and 10g baking soda
  • 40g Cocoa powder
  • 100g Dates
  • 60g Almond flour
  • 300g Strawberries
  • 80g Dates
  • 1/2 Cup of water
  • 100g hot cream or hot coconut milk
  • 70g Chocolate
  • Additional decoration items as desired

Instructions

  1. Blend the sweet potato, eggs, yeast (or yeast and baking soda), cocoa powder, dates, and almond flour until smooth. Pour the batter into a mold.
  2. Bake the cake for 35 minutes at 180°C (350°F).
  3. Once baked, let the cake cool, then cut it in half horizontally and create a hollow in the center of one half for the filling.
  4. For the filling, cook the strawberries and dates with water over medium heat until they reach a jam-like consistency. Spread this filling into the hollow of the cake, then cover it with the other half.
  5. Refrigerate the cake for a few hours to set.
  6. For the topping, mix the hot cream or hot coconut milk with the chocolate until smooth. Spread this mixture over the top of the cake and decorate as desired.
