Ingredients

  • Cake:
  • ☕️3 cups all-purpose flour
  • ☕️200 g chilled butter
  • ☕️70~80 g sugar
  • ☕️1 teaspoon baking powder
  • ☕️2 egg yolks
  • ☕️1 tablespoon yogurt
  • ☕️2 tablespoons cocoa powder
  • Additionally:
  • 5 tablespoons currant jam
  • Cheese Filling:
  • ☕️1 kg cheesecake cheese
  • ☕️1/3 cup sugar (or more)
  • ☕️4 egg yolks
  • ☕️1 pudding mix
  • Meringue:
  • ☕️6 egg whites
  • ☕️1/2 cup sugar
  • ☕️1 packet strawberry jelly

Instructions

Combine the ingredients for the shortcrust pastry until you get a uniform consistency (excluding cocoa). Divide the dough into 3 parts - smaller, medium, and largest. Add cocoa to the medium portion and knead. Then, place the cocoa dough and the smallest portion of dough in the freezer.

Roll out the largest piece of dough and line the bottom of a baking pan. Bake at 180 degrees Celsius for about 15 minutes. Once out of the oven, spread jam over the crust.

For the cheese filling:
Mix the ingredients for the filling until well combined. Grate the cocoa dough using a grater with large holes. Pour the cheese mixture onto the crust, and spread it evenly.

Whip the egg whites with sugar until stiff peaks form, then fold in the jelly powder. Spread the meringue over the cheese layer.

Grate the third piece of dough with a grater with large holes. Evenly spread it over the meringue in the pan. Bake the cake for about 45-50 minutes.
