Pumpkin Bliss Cake

Ingredients

  • 2 cups of all-purpose flour
  • 1 small pumpkin (for the cake, use 1 cup of pumpkin puree)
  • 1.5 teaspoons of baking powder
  • 5 tablespoons of brown sugar
  • 1 teaspoon of baking soda
  • 1 teaspoon of cinnamon
  • 4 eggs
  • Just under a cup of vegetable oil

Instructions

  1. First, chop the pumpkin into small pieces and cook it until it's soft – you can check with a fork. Alternatively, you can roast the pumpkin with the skin on in a preheated oven at 350°F for about 30 minutes.
  2. Once the pumpkin is cooked, drain it and blend it until smooth. Let it cool.
  3. In a bowl, mix together the flour, sugar, cinnamon, baking powder, and baking soda.
  4. Then add the eggs, pumpkin puree, and oil to the dry ingredients, and mix everything well.
  5. Line a baking pan with parchment paper and pour in the batter.
  6. Bake at 350°F for about 45 minutes, or until a toothpick inserted into the center comes out clean.
