Ingredients

  • or the batter:
  • 1 cup (200g) sugar
  • 5 eggs (medium-sized)
  • 3 cups (350g) all-purpose flour
  • 1 packet vanilla sugar
  • 1 packet baking powder
  • 1 tablespoon cornstarch
  • ¾ cup (200ml) oil
  • ¾ cup (200ml) milk
  • 5.3 ounces (150g) speculoos cookies
  • Ingredients for the pudding:
  • 1 cup (200g) sour cream
  • ½ cup (50g) powdered sugar
  • ½ cup (100g) milk
  • 2.6 ounces (75g) whipped cream powder
  • For decoration: Speculoos cookies

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking pan.
  2. In a large mixing bowl, combine the sugar, eggs, flour, vanilla sugar, baking powder, and cornstarch.
  3. Gradually add the oil and milk to the dry ingredients, mixing until well combined.
  4. Crush the speculoos cookies into small pieces and fold them into the batter.
  5. Pour the batter into the prepared baking pan and spread it out evenly.
  6. In another bowl, mix together the sour cream, powdered sugar, milk, and whipped cream powder to make the pudding.
  7. Pour the pudding mixture over the cake batter in the pan, spreading it out evenly.
  8. Arrange some whole speculoos cookies on top of the pudding layer for decoration.
  9. Bake in the preheated oven for about 35-40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
  10. Once baked, remove the cake from the oven and allow it to cool before slicing and serving.
