Speculaas Cake
Ingredients
- or the batter:
- 1 cup (200g) sugar
- 5 eggs (medium-sized)
- 3 cups (350g) all-purpose flour
- 1 packet vanilla sugar
- 1 packet baking powder
- 1 tablespoon cornstarch
- ¾ cup (200ml) oil
- ¾ cup (200ml) milk
- 5.3 ounces (150g) speculoos cookies
- Ingredients for the pudding:
- 1 cup (200g) sour cream
- ½ cup (50g) powdered sugar
- ½ cup (100g) milk
- 2.6 ounces (75g) whipped cream powder
- For decoration: Speculoos cookies
Instructions
- Preheat your oven to 375°F (190°C) and grease a baking pan.
- In a large mixing bowl, combine the sugar, eggs, flour, vanilla sugar, baking powder, and cornstarch.
- Gradually add the oil and milk to the dry ingredients, mixing until well combined.
- Crush the speculoos cookies into small pieces and fold them into the batter.
- Pour the batter into the prepared baking pan and spread it out evenly.
- In another bowl, mix together the sour cream, powdered sugar, milk, and whipped cream powder to make the pudding.
- Pour the pudding mixture over the cake batter in the pan, spreading it out evenly.
- Arrange some whole speculoos cookies on top of the pudding layer for decoration.
- Bake in the preheated oven for about 35-40 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and allow it to cool before slicing and serving.
