Quark Crumble Cherry Cake

Ingredients

  • Ingredients for the Base + Crumble:
  • 1 cup (250g) softened butter
  • 3/4 cup (150g) sugar
  • 1 packet vanilla sugar
  • 1 egg
  • 1 packet baking powder
  • 3 1/2 cups (450g) flour
  • Plus 2 tablespoons of flour for the crumble
  • For the Filling:
  • 2 1/2 cups (600g) sour cream
  • 2 cups (500g) quark (40% fat)
  • 1 cup (240ml) heavy cream
  • 1 cup (200g) sugar
  • 1 packet vanilla sugar
  • 4 eggs
  • 2 packets vanilla pudding powder
  • Additionally: Cherries

Instructions

  1. For the dough, combine all ingredients in a bowl and knead into a soft dough. Set aside less than half for the crumble, add 2 tablespoons of flour, and crumble.
  2. Spread the remaining dough on a baking sheet lined with parchment paper and press firmly. (Approximately 25x35cm)
  3. For the filling, mix all ingredients together and pour into the pan.
  4. Distribute the cherries over the filling.
  5. Sprinkle the crumble over the top.
  6. Place the cake in the oven and bake at 320°F (160°C) for about 45 minutes.
  7. Let the cake cool for at least 4 hours. It's best to chill it overnight in the refrigerator. It's super delicious and creamy.
