Quark Crumble Cherry Cake
Ingredients
- Ingredients for the Base + Crumble:
- 1 cup (250g) softened butter
- 3/4 cup (150g) sugar
- 1 packet vanilla sugar
- 1 egg
- 1 packet baking powder
- 3 1/2 cups (450g) flour
- Plus 2 tablespoons of flour for the crumble
- For the Filling:
- 2 1/2 cups (600g) sour cream
- 2 cups (500g) quark (40% fat)
- 1 cup (240ml) heavy cream
- 1 cup (200g) sugar
- 1 packet vanilla sugar
- 4 eggs
- 2 packets vanilla pudding powder
- Additionally: Cherries
Instructions
- For the dough, combine all ingredients in a bowl and knead into a soft dough. Set aside less than half for the crumble, add 2 tablespoons of flour, and crumble.
- Spread the remaining dough on a baking sheet lined with parchment paper and press firmly. (Approximately 25x35cm)
- For the filling, mix all ingredients together and pour into the pan.
- Distribute the cherries over the filling.
- Sprinkle the crumble over the top.
- Place the cake in the oven and bake at 320°F (160°C) for about 45 minutes.
- Let the cake cool for at least 4 hours. It's best to chill it overnight in the refrigerator. It's super delicious and creamy.
