Choco-Tomato Surprise Cake ( Egg-Free )

Ingredients

  • 1 cup canned tomatoes
  • 1 ripe banana
  • 1/2 cup oil
  • 100 grams erythritol or sugar
  • 2 cups all-purpose or whole wheat flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • Topping: icing and berries

Instructions

Start by blending together the canned tomatoes, banana, oil, and sweetener until smooth.

In a separate bowl, sift together the flour, baking powder, baking soda, and cocoa powder. Mix well.

Combine the wet mixture with the dry ingredients and mix until everything is well incorporated.

Pour the batter into a loaf pan lined with parchment paper and bake in a preheated oven at 180 degrees Celsius (350 degrees Fahrenheit) for about 45-50 minutes.

Once baked, drizzle with icing and sprinkle with berries for a finishing touch.
