Blueberry Bliss Custard Tart

Ingredients

  • Crust:
  • 1 1/3 cups all-purpose flour (170 g)
  • 7 tablespoons cold butter (100 g)
  • 1 egg yolk
  • 1 teaspoon powdered sugar
  • Custard Filling:
  • 2 cups milk (500 ml)
  • 1/4 cup sugar
  • 2 egg yolks
  • 1 heaping tablespoon all-purpose flour
  • 1 heaping tablespoon cornstarch
  • 10.5 oz blueberries (300 g)
  • Homemade blueberry jam (optional)

Instructions

  1. Combine the crust ingredients until you get a uniform dough. Wrap it in plastic wrap and refrigerate for half an hour.
  2. Preheat the oven to 350°F (180°C). Press the dough into a tart pan and bake for about 20 minutes or until golden brown.
  3. For the custard, heat 1 3/4 cups of milk with sugar. Meanwhile, mix the remaining milk with egg yolks and both types of flour. When the milk boils, slowly pour the egg mixture into it while stirring continuously. Once thickened, remove from heat.
  4. Spread blueberry jam over the baked crust and pour the cooled custard on top.
  5. Sprinkle blueberries evenly over the custard.
  6. Chill for a few hours before serving.
