Apple-Raspberry Delight

Ingredients

  • For the crust:
  • 1 cup all-purpose flour
  • 1 cup semolina flour
  • 4 egg yolks
  • 1/2 cup powdered sugar
  • 1 teaspoon baking powder
  • 5.3 oz (150 g) butter
  • For the roasted apples:
  • 4 apples
  • Lemon jelly
  • 1 teaspoon cinnamon
  • 2 tablespoons lemon juice
  • For the custard foam:
  • 4 egg whites
  • 1/2 cup sugar
  • 1 packet vanilla pudding mix
  • 1/2 cup vegetable oil
  • Additionally:
  • 5.3 oz (150 g) raspberries

Instructions

Mix and divide the crust ingredients into 2 parts (one larger, one smaller). Place in the fridge for 20 minutes. After chilling, use the larger part to line the bottom of a baking dish lined with parchment paper. Bake for 15 minutes at 350°F (180°C).

For the apples:
Cut the apples into large cubes. Transfer them to a pan, add lemon juice and cinnamon. Mix well, and towards the end of cooking, add powdered lemon jelly and mix thoroughly. Transfer the warm apples with jelly onto the pre-baked crust.

For the custard foam:
Beat the egg whites gradually adding sugar. Then slowly pour in the oil and add the pudding mix.
Spread the foam over the apples. Sprinkle raspberries on top, and grate the remaining crust over them.
Bake for 50 minutes at 350°F (180°C).
