Solero Dessert

Ingredients

  • 500g (about 2 cups) low-fat quark
  • 3 tablespoons powdered sugar
  • A bit of vanilla sugar
  • 250g (about 1 cup) cream cheese
  • 200ml (about 3/4 cup) heavy cream
  • Zest of 1 lemon
  • A splash of lemon juice
  • 1 packet of whipped cream stabilizer
  • For the Fruit Mirror:
  • 500ml (about 2 cups) orange juice or multivitamin juice
  • 2 tablespoons sugar
  • 2 tablespoons cornstarch

Instructions

  1. Prepare the Cream:
  2. In a mixing bowl, combine 500g of low-fat quark, 3 tablespoons of powdered sugar, a bit of vanilla sugar, 250g of cream cheese, the zest of 1 lemon, and a splash of lemon juice.
  3. Whip 200ml of heavy cream until stiff peaks form, then fold it into the quark mixture.
  4. Add 1 packet of whipped cream stabilizer and gently fold it in.
  5. Set the cream mixture aside.
  6. Make the Fruit Mirror:
  7. In a saucepan, combine 500ml of orange juice or multivitamin juice with 2 tablespoons of sugar and 2 tablespoons of cornstarch.
  8. Bring the mixture to a quick boil, stirring constantly until it thickens.
  9. Remove from heat and let it cool slightly.
  10. Assemble the Dessert:
  11. Pour the cream mixture into serving glasses or bowls, filling them about halfway.
  12. Once the fruit mirror has cooled down a bit, pour it over the cream in each glass, covering the top.
  13. Refrigerate the desserts for 1-2 hours before serving to allow them to set.
