Solero Dessert
Ingredients
- 500g (about 2 cups) low-fat quark
- 3 tablespoons powdered sugar
- A bit of vanilla sugar
- 250g (about 1 cup) cream cheese
- 200ml (about 3/4 cup) heavy cream
- Zest of 1 lemon
- A splash of lemon juice
- 1 packet of whipped cream stabilizer
- For the Fruit Mirror:
- 500ml (about 2 cups) orange juice or multivitamin juice
- 2 tablespoons sugar
- 2 tablespoons cornstarch
Instructions
- Prepare the Cream:
- In a mixing bowl, combine 500g of low-fat quark, 3 tablespoons of powdered sugar, a bit of vanilla sugar, 250g of cream cheese, the zest of 1 lemon, and a splash of lemon juice.
- Whip 200ml of heavy cream until stiff peaks form, then fold it into the quark mixture.
- Add 1 packet of whipped cream stabilizer and gently fold it in.
- Set the cream mixture aside.
- Make the Fruit Mirror:
- In a saucepan, combine 500ml of orange juice or multivitamin juice with 2 tablespoons of sugar and 2 tablespoons of cornstarch.
- Bring the mixture to a quick boil, stirring constantly until it thickens.
- Remove from heat and let it cool slightly.
- Assemble the Dessert:
- Pour the cream mixture into serving glasses or bowls, filling them about halfway.
- Once the fruit mirror has cooled down a bit, pour it over the cream in each glass, covering the top.
- Refrigerate the desserts for 1-2 hours before serving to allow them to set.
