Ingredients

  • Shortcrust pastry:
  • ✅300g all-purpose flour
  • ✅3 egg yolks
  • ✅250g butter
  • Icing:
  • ✅1 egg white
  • ✅100g powdered sugar
  • Additionally:
  • Plum jam and coconut flakes

Instructions

    Mix all the ingredients until you get a uniform dough.
    ➡️Form the dough into a ball and wrap it in plastic wrap, then refrigerate for 30 minutes.
    👉Roll out the chilled dough on a floured surface.
    👉Cut out circles from the dough (using a glass or cookie cutter).
    ➡️Place the cookies on a baking sheet lined with parchment paper.
    ➡️Mix the egg white with powdered sugar.
    ➡️Brush a layer of icing on the cookies using a pastry brush.
    Bake for about 15 minutes at 180°C, then let them cool.
    Fill the cookies with plum jam and sandwich them together in pairs.
    ➡️Spread jam on the sides of the cookies and roll them in coconut flakes.
