Pistachio Cookies

Ingredients

  • 1 cup (250g) softened butter
  • 1/2 cup (100g) sugar
  • 1 1/4 cups (150g) ground pistachios
  • 1/2 teaspoon cinnamon
  • 1 packet vanilla sugar
  • 1/2 packet baking powder
  • 3 1/4 cups (400g) flour
  • A few drops of green food coloring

Instructions

  1. Preheat your oven to 320°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the ground pistachios, cinnamon, vanilla sugar, and baking powder to the bowl. Mix well.
  4. Gradually add the flour to the mixture, stirring until a dough forms.
  5. Add a few drops of green food coloring to the dough, mixing until evenly distributed and the desired color is achieved.
  6. Shape the dough into small balls and place them onto the prepared baking sheet.
  7. Flatten each ball slightly with the back of a fork or your fingers.
  8. Bake in the preheated oven for about 25 minutes, or until the cookies are lightly golden around the edges.
  9. Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, store the pistachio cookies in an airtight container to keep them fresh. Enjoy!
