Pistachio Cookies
Ingredients
- 1 cup (250g) softened butter
- 1/2 cup (100g) sugar
- 1 1/4 cups (150g) ground pistachios
- 1/2 teaspoon cinnamon
- 1 packet vanilla sugar
- 1/2 packet baking powder
- 3 1/4 cups (400g) flour
- A few drops of green food coloring
Instructions
- Preheat your oven to 320°F (160°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the ground pistachios, cinnamon, vanilla sugar, and baking powder to the bowl. Mix well.
- Gradually add the flour to the mixture, stirring until a dough forms.
- Add a few drops of green food coloring to the dough, mixing until evenly distributed and the desired color is achieved.
- Shape the dough into small balls and place them onto the prepared baking sheet.
- Flatten each ball slightly with the back of a fork or your fingers.
- Bake in the preheated oven for about 25 minutes, or until the cookies are lightly golden around the edges.
- Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, store the pistachio cookies in an airtight container to keep them fresh. Enjoy!
