Delicious Healthy Cookies

Ingredients

  • For the Dough:
  • 3 tablespoons of ground flaxseed (about 30g)
  • 6 tablespoons of water (about 90ml)
  • 1/2 cup of coconut oil (about 120ml)
  • 1/4 cup of granulated monk fruit sweetener (about 60g)
  • 1/8 cup of golden monk fruit sweetener (about 40g)
  • 1 1/4 cups of all-purpose flour (about 165g)
  • 1 teaspoon of baking powder
  • Toppings:
  • 1/3 cup of rolled oats
  • 1/3 cup of dried cranberries
  • 1/3 cup of sliced almonds
  • 1/3 cup of your favorite chocolate chunks

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the flaxseed eggs by mixing the ground flaxseed with water in a small bowl. Let it sit for about 5 minutes until it thickens.
  3. In a mixing bowl, combine the coconut oil, granulated monk fruit sweetener, and golden monk fruit sweetener. Mix until well combined.
  4. Add the flaxseed mixture to the bowl and stir until incorporated.
  5. Sift the flour and baking powder into the bowl and mix until a dough forms.
  6. Fold in your choice of toppings: rolled oats, dried cranberries, sliced almonds, and chocolate chunks.
  7. Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving some space between each cookie.
  8. Gently flatten each cookie with the back of a spoon or your palm.
  9. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
  10. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
