Delicious Healthy Cookies
Ingredients
- For the Dough:
- 3 tablespoons of ground flaxseed (about 30g)
- 6 tablespoons of water (about 90ml)
- 1/2 cup of coconut oil (about 120ml)
- 1/4 cup of granulated monk fruit sweetener (about 60g)
- 1/8 cup of golden monk fruit sweetener (about 40g)
- 1 1/4 cups of all-purpose flour (about 165g)
- 1 teaspoon of baking powder
- Toppings:
- 1/3 cup of rolled oats
- 1/3 cup of dried cranberries
- 1/3 cup of sliced almonds
- 1/3 cup of your favorite chocolate chunks
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the flaxseed eggs by mixing the ground flaxseed with water in a small bowl. Let it sit for about 5 minutes until it thickens.
- In a mixing bowl, combine the coconut oil, granulated monk fruit sweetener, and golden monk fruit sweetener. Mix until well combined.
- Add the flaxseed mixture to the bowl and stir until incorporated.
- Sift the flour and baking powder into the bowl and mix until a dough forms.
- Fold in your choice of toppings: rolled oats, dried cranberries, sliced almonds, and chocolate chunks.
- Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving some space between each cookie.
- Gently flatten each cookie with the back of a spoon or your palm.
- Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
