Blueberry Cookies

Ingredients

  • 2 1/2 cups (356g) all-purpose flour
  • 1 teaspoon (4g) baking powder
  • 1 tablespoon (10g) cornstarch
  • 1/2 teaspoon (3g) salt
  • 1 cup (160g) frozen blueberries
  • 3/4 cup (170g) butter
  • 3/4 cup (180g) white sugar
  • 1 cup (150g) white chocolate chips

Instructions

  1. In a bowl, mix together the flour, baking powder, cornstarch, and salt.
  2. In a saucepan over medium heat, warm the blueberries for 2-3 minutes or until they are no longer frozen. Mash them as much as possible and set aside.
  3. In a bowl, beat the butter and white sugar for 3 minutes, or until the mixture is pale and fluffy. Add the blueberries, which should now be at room temperature, and beat on high speed for about 5 minutes. It's ready when the mixture turns purple and there are no whole blueberries left.
  4. Add the flour to the bowl in two parts and gently fold it in, being careful not to deflate the air that has already been incorporated into the mixture. Gently fold in the white chocolate chips.
  5. Cover the bowl and refrigerate for 3 hours or overnight. Chilling is necessary for thicker cookies.
  6. Preheat the oven to 375°F (190°C). Bake for 13-15 minutes. Let them cool on the baking sheet before transferring them to a wire rack to cool completely. Enjoy your delicious blueberry cookies!
