Ingredients

  • Toasted Butter:
  • 2 cups (454g) unsalted butter
  • Dough:
  • 1 cup (240g) warm milk
  • 1 tablespoon (15g) sugar
  • 2 ¼ teaspoons active dry yeast
  • 4 ½ cups (565g) all-purpose flour
  • 1 teaspoon (7g) salt
  • 3 tablespoons (45g) sugar
  • 2 eggs
  • 1 teaspoon (7g) vanilla extract
  • 7 tablespoons (100g) butter
  • Filling:
  • 1 cup (250g) toasted butter, at room temperature
  • 1 tablespoon flour
  • 3 tablespoons cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 ¾ cups (350g) brown sugar
  • Glaze:
  • ½ cup (100g) toasted butter, at room temperature
  • 8 ounces (225g) cream cheese, at room temperature
  • 2 cups (250g) powdered sugar
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract

Instructions

  1. In a saucepan over medium heat, brown the butter until it foams and turns golden brown, emitting a nutty aroma. Once browned, the liquid in the butter will evaporate, reducing its weight. Remove from heat, pour into a bowl to cool, and refrigerate until firm. Remove from the fridge and let it soften to room temperature, stirring occasionally, until smooth and spreadable.
  2. In a bowl, dissolve the sugar in the warm milk. Add the yeast and whisk until combined. Let the yeast activate for about 10-15 minutes or until the mixture is frothy.
  3. In another bowl, combine the flour, salt, and sugar. Pour in the eggs, vanilla, and the yeast mixture. Knead with a dough hook for 3-5 minutes on low speed. Increase the speed and beat for another 5 minutes. Add the butter gradually, kneading until incorporated. Knead for another 6-12 minutes or until the dough no longer sticks to the bowl and is smooth. Let it rest for 45 minutes or until the dough doubles in size.
  4. For the filling, combine all the ingredients.
  5. Roll out the dough on a floured surface into a rectangle. Spread the filling, roll into a spiral, and cut into 12 equal parts. Place them on a tray, cover, and let them rise for 45 minutes or until well puffed up.
  6. Bake for 35 to 40 minutes at 350°F (180°C) or until golden brown. For the glaze, combine all the ingredients and cover the rolls. Enjoy your delicious toasted butter cinnamon rolls!
