Lemon Cookies
Ingredients
- 1/2 cup (1 stick) unsalted butter
- 1 1/2 cups (185g) powdered sugar
- 2 teaspoons lemon zest
- 4 tablespoons lemon juice
- 1 3/4 cups (230g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the butter and powdered sugar until smooth.
- Add the lemon zest and lemon juice to the butter mixture and mix well.
- In a separate bowl, whisk together the flour, baking powder, and baking soda.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Scoop tablespoon-sized portions of dough onto a lined baking sheet, leaving space between each cookie.
- Flatten each cookie slightly with the back of a spoon.
- Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are golden brown and firm.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

- For a milder lemon flavor, you can reduce the amount of lemon zest and juice used in the recipe.
