Light Caramelized Apple Cheesecake

Ingredients

  • CRUST
  • ✅1 and 1/2 cups all-purpose flour
  • ✅3 tablespoons sugar
  • ✅1/2 cup butter
  • ✅1 egg
  • ✅1/2 teaspoon baking powder
  • Mix the ingredients for the crust until you get a uniform dough. Line the bottom of the pan with the dough and bake at 180 degrees Celsius for 20 minutes. After this time, remove it.
  • APPLES
  • ☕️1 kg apples
  • ☕️4 tablespoons sugar
  • ☕️1 tablespoon butter
  • ☕️1/2 teaspoon cinnamon
  • CHEESECAKE FILLING
  • ✅1 kg ground cottage cheese
  • ✅3/4 cup sugar
  • ✅1 package (40 g) vanilla or cream pudding mix without sugar
  • ✅5 eggs
  • Additionally:
  • ✅1.5 tablespoons breadcrumbs

Instructions

Apples:

Wash, peel, and cut the apples into eighths. Sprinkle sugar into a pan and heat until it dissolves. Then add butter and mix. Transfer the apples to the caramel, add cinnamon, mix, and heat until the apples soften. Let the caramelized apples cool down.

Cheesecake Filling:

Separate the egg whites from the yolks. Add a pinch of salt to the egg whites and beat until stiff peaks form. Transfer the egg yolks to a bowl, add sugar, and mix until light and fluffy. Then, while continuously mixing, gradually add the ground cottage cheese to the egg yolks. Finally, fold the pudding mix into the cheese mixture. Then gently fold the beaten egg whites into the cheese mixture.
Sprinkle breadcrumbs over the pre-baked crust and layer the caramelized apples on top. Spread the cheesecake filling over the apples and smooth it out.
Place the cheesecake in an oven preheated to 170 degrees Celsius (top and bottom heat) and bake for 70 minutes. After this time, turn off the oven and let it cool with the door slightly ajar.
