Rosé Dream Cheesecake
Ingredients
- Ingredients for the crust: 30*20 cm baking pan
- Crust:
- 🎄 250 g all-purpose flour
- 📍 1 teaspoon baking powder
- 🎄 1/3 cup powdered sugar
- 📍 2 egg yolks
- 🎄 80 g butter
- Ingredients for the cheese filling 👇
- ➡️ 1 kg bucket cottage cheese
- ➡️ 4 egg yolks
- ➡️ 1/3 cup granulated sugar
- ➡️ 1.5 packets vanilla or cream pudding mix
- ➡️ 1.5 cups milk
- ➡️ 1/2 cup vegetable oil
- Ingredients for the meringue:
- 🔹 6 egg whites
- 🔹 2/3 cup granulated sugar
- 🔹 Pinch of salt
Instructions
Crust:
👉 Mix all crust ingredients until they combine into a uniform consistency.
👉 Wrap the dough and refrigerate for 15-20 minutes. After this time, roll it into a rectangle and place it on the bottom of the pan.
👉 Bake for 15 minutes at 350°F (180°C).
Cheese Filling:
➡️ Mix all ingredients for the cheese filling - just until combined!
👉 Pour the prepared cheese filling over the pre-baked crust and bake at 170°C for about 1 hour.
📌 Beat egg whites starting at low speed and gradually increasing. While beating, add sugar gradually. Beat until stiff peaks form (it's very important for the meringue to be well-beaten!).
Carefully remove the baked cheesecake from the oven and spread the whipped meringue on top, smoothing it out.
❣️ Bake the cheesecake for another 15 minutes at 160°C (just 15 minutes to create the rosé effect).
‼️ After 15 minutes, remove from the oven. After a few minutes, beautiful droplets will start to form.
