Delicious Blackforest Cake

Ingredients

  • Sponge Cake:
  • 5 eggs
  • 1/2 cup sugar
  • 1/2 cup all-purpose flour
  • 3 tablespoons cocoa powder
  • 30 g butter
  • CHOCOLATE CREAM 🍫
  • ➡️ 500 ml heavy cream (30%)
  • ➡️ 250 g mascarpone cheese
  • ➡️ 180 g dark chocolate
  • ➡️ 3 tablespoons powdered sugar
  • WHIPPED CREAM:
  • 👉 450 ml heavy whipping cream
  • 👉 3 tablespoons powdered sugar
  • 👉 2 teaspoons gelatin
  • 👉 about 1/2 cup hot water
  • Additionally: 250 g frozen cherries

Instructions

Separate egg whites from yolks and beat until stiff peaks form. Gradually add sugar and beat until the mixture is thick. Then add egg yolks one at a time. Sift flour together with cocoa powder.

👉 Add in several batches to the egg mixture, gently folding with a spatula.

👉 Finally, combine with melted butter and mix. ➡️ Bake at 350°F (180°C) for about 40 minutes 🥰

Melt the dark chocolate in a double boiler and let it cool. 👉 Whip the heavy cream with mascarpone cheese until thick, then add sifted powdered sugar.

➡️ Finally, fold in the melted chocolate using a spatula. ➡️ Spread frozen cherries over the sponge cake layer.

👉 Then spread the chocolate mixture and level it. 👉 Place the second half of the sponge cake on top and press down.

➡️ Dissolve gelatin in hot water and let it cool.

👉 Whip the heavy cream until stiff peaks form, then add sifted powdered sugar and slowly pour in the gelatin while continuously mixing. Spread over the sponge cake and level it.

👉 Refrigerate for several hours! ♥️

Before serving, sprinkle with grated chocolate 😍
