Cinnamon Cheesecake with Crumble and Peaches

Ingredients

  • Cinnamon Crust:
  • 2 cups all-purpose flour
  • 1 and 1/2 teaspoons baking powder
  • 1 tablespoon cocoa powder
  • 1.5 tablespoons cinnamon
  • 1/2 cup sugar
  • 1 stick (8 tablespoons) butter
  • 2 eggs
  • Cheesecake Filling:
  • 1 kg cream cheese
  • 1/2 cup sugar (or more if you like it sweeter)
  • 2 packets vanilla pudding mix
  • 200 ml heavy cream (30%)
  • 3 eggs
  • Additionally: peaches or nectarines

Instructions

    👉In a bowl, combine flour, baking powder, cocoa powder, cinnamon, and sugar. 👉Mix everything together.
    Add cold, diced butter.
    👉Add eggs and combine the ingredients into a smooth dough. Form a ball, divide it into 2 parts.
    👉Put one part of the dough in the freezer, and use the other part to line the bottom of the baking pan. Prick it with a fork. Pre-bake for 10 minutes at 350°F (180°C).
    👉In the mixing bowl, place cream cheese, sugar, and pudding mixes. Mix at medium speed.
    👉Add eggs and mix for 1 minute at higher speed until smooth.
    ➡️Pour in the heavy cream and mix until combined.
    ➡️Spread the filling over the pre-baked crust, and arrange sliced peaches on top.
    ➡️Grate the reserved part of the dough over the top and place it in the oven. Bake for about 45 minutes at 350°F (180°C).
