Ingredients

  • For the Cake:
  • 3 eggs
  • 1 cup (200g) sugar
  • 1 packet vanilla sugar
  • 3/4 cup (200ml) milk
  • 2 tablespoons water mixed with 1 tablespoon instant coffee
  • 1 cup (100g) ground hazelnuts
  • 1 packet baking powder
  • 2 cups (250g) flour
  • Springform pan: approximately 10x10 inches (25x25cm)
  • For the Cream:
  • 1 3/4 cups (400ml) heavy cream
  • 1 cup (250g) mascarpone cheese
  • 1 1/4 cups (150g) powdered sugar
  • 2 packets vanilla sugar
  • 4 tablespoons stabilizer for cream (e.g., Sanapart)
  • 2 tablespoons water mixed with 2 tablespoons coffee
  • Additionally:
  • A cup of coffee for soaking.

Instructions

  1. Preparation:
  2. Preheat your oven to 320°F (160°C). Grease and line a springform pan measuring approximately 10x10 inches (25x25cm) with parchment paper.
  3. Making the Cake:
  4. In a mixing bowl, beat the eggs, sugar, and vanilla sugar until fluffy.
  5. Mix the milk with the water and instant coffee, then add it to the egg mixture.
  6. Stir in the ground hazelnuts.
  7. Sift the flour and baking powder into the bowl and mix until well combined.
  8. Pour the batter into the prepared springform pan and smooth the top.
  9. Bake in the preheated oven for about 35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Once baked, remove the cake from the oven and allow it to cool completely.
  11. Preparing the Cream:
  12. In a separate bowl, whip the heavy cream until stiff peaks form.
  13. In another bowl, mix the mascarpone cheese with powdered sugar and vanilla sugar until smooth.
  14. Dissolve the stabilizer for cream in water and coffee mixture, then add it to the mascarpone mixture and mix well.
  15. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.
  16. Assembling the Coffee Slice:
  17. Cut the cooled cake horizontally into two equal layers.
  18. Place one layer of the cake on a serving plate and soak it with some freshly brewed coffee.
  19. Spread a generous layer of the prepared cream over the soaked cake layer.
  20. Place the second cake layer on top and soak it with more coffee.
  21. Spread the remaining cream over the top of the cake, ensuring it's evenly distributed.
  22. Chilling:
  23. Refrigerate the assembled cake for at least 3 hours to allow the flavors to meld and the cream to set.
  24. Serving:
  25. Once chilled, slice the Coffee Slice into portions and serve. Enjoy your delicious treat!
