Quick Pudding Rolls with Puff Pastry
Ingredients
- 2 1/2 cups (600ml) milk
- 3/4 cup (150g) sugar
- Vanilla extract
- 2 packets vanilla pudding powder
- 3 1/2 tablespoons (50g) butter
- 1 egg yolk
Instructions
- Preheat your oven to 350°F (180°C).
- For the pudding filling, in a saucepan, combine the milk, sugar, and a few drops of vanilla extract. Bring the mixture to a simmer over medium heat, stirring constantly.
- In a small bowl, whisk together the vanilla pudding powder with a little milk to make a slurry. Once the milk mixture is simmering, slowly pour in the pudding slurry while whisking continuously.
- Cook the pudding mixture for about 2-3 minutes until it thickens. Remove from heat and stir in the butter until melted. Let the pudding cool slightly.
- Roll out the puff pastry sheet on a lightly floured surface into a large rectangle.
- Spread the prepared pudding evenly over the puff pastry, leaving a small border around the edges.
- Starting from one long edge, tightly roll up the puff pastry into a log.
- Cut the log into slices, about 1 inch thick.
- Place the slices onto a baking sheet lined with parchment paper, spacing them apart.
- Beat the egg yolk with a little water to make an egg wash, then brush it over the tops of the pastry slices.
- Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and puffed up.
