Quick Pudding Rolls with Puff Pastry

Ingredients

  • 2 1/2 cups (600ml) milk
  • 3/4 cup (150g) sugar
  • Vanilla extract
  • 2 packets vanilla pudding powder
  • 3 1/2 tablespoons (50g) butter
  • 1 egg yolk

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. For the pudding filling, in a saucepan, combine the milk, sugar, and a few drops of vanilla extract. Bring the mixture to a simmer over medium heat, stirring constantly.
  3. In a small bowl, whisk together the vanilla pudding powder with a little milk to make a slurry. Once the milk mixture is simmering, slowly pour in the pudding slurry while whisking continuously.
  4. Cook the pudding mixture for about 2-3 minutes until it thickens. Remove from heat and stir in the butter until melted. Let the pudding cool slightly.
  5. Roll out the puff pastry sheet on a lightly floured surface into a large rectangle.
  6. Spread the prepared pudding evenly over the puff pastry, leaving a small border around the edges.
  7. Starting from one long edge, tightly roll up the puff pastry into a log.
  8. Cut the log into slices, about 1 inch thick.
  9. Place the slices onto a baking sheet lined with parchment paper, spacing them apart.
  10. Beat the egg yolk with a little water to make an egg wash, then brush it over the tops of the pastry slices.
  11. Bake in the preheated oven for 20-25 minutes or until the pastry is golden brown and puffed up.
  12. Allow the pudding rolls to cool slightly before serving. Enjoy your delicious and quick pudding rolls! 🥐
