Apple Delight Cake with Meringue Topping

Ingredients

  • Cake:
  • 1/2 kg all-purpose or light spelt flour
  • 6 egg yolks (separate whites for meringue)
  • 200 g butter
  • 4 tablespoons sugar (add more if you prefer sweeter cakes 😋)
  • 2 teaspoons baking powder
  • Filling:
  • Roasted homemade apples or store-bought jar
  • Meringue:
  • 6 egg whites
  • 3 tablespoons sugar
  • 2 tablespoons potato starch

Instructions

    Mix all cake ingredients and knead into a smooth dough. Divide into two parts. Use one part to line the bottom of the baking tray, then spread the roasted apples on top. Beat egg whites until stiff, gradually adding sugar. Lastly, fold in the potato starch into the meringue. Spread the meringue over the apples. Finally, crumble or grate the remaining dough over the top. Bake at 180°C (350°F) for about 45 minutes.
