Yogurt Cake with Fruits

Ingredients

  • 4 eggs
  • 200 ml plain yogurt (at room temperature)
  • 4 tablespoons erythritol (if you prefer it sweeter, add more – you can also use sugar ❗️)
  • 150g corn flour (if unavailable, regular flour works too)
  • 1 teaspoon baking powder
  • blueberries, raspberries

Instructions

  1. Beat the eggs with erythritol (or sugar) until fluffy ❗️
  2. Add the plain yogurt and mix well.
  3. Gradually add the flour and baking powder while stirring continuously.
  4. Finally, gently fold in the fruits using a spoon.
  5. Line a baking pan with parchment paper and pour in the batter.
  6. Place it in a preheated oven at 175°C (350°F) for about 45 minutes.
