Plum Surprise Cake

Ingredients

  • 2 cups of all-purpose flour (about 300 g, I used half all-purpose and half spelt)
  • 200 g of butter
  • 2 teaspoons of baking powder
  • 1 egg
  • 1/3 cup of sugar
  • 800 g of plums

Instructions

    In a bowl, mix the flour with baking powder and sugar. Add the egg and diced butter. Knead everything into a smooth dough, shape it into a ball, and chill it in the freezer for 20 minutes. After 20 minutes, take out the dough, divide it into two parts. Grate one part onto the bottom of the pan. Layer the chopped plums over the dough. Grate the other part on top. Bake at 180 degrees Celsius for about 50-55 minutes.
