Chessboard Cheesecake
Ingredients
- Chocolate Cake:
- 150g butter
- 1/3 cup milk
- 2 tablespoons cocoa powder
- 1/3 cup sugar
- 180g all-purpose flour
- 2 eggs
- 1 teaspoon baking powder
- Cheese Filling:
- 125g softened butter
- 1/2 cup sugar
- 4 eggs
- 800g cottage cheese
- 200g heavy cream (30% fat)
- 2 tablespoons pudding mix (powder)
Instructions
- Combine the first four ingredients for the chocolate cake in a saucepan and heat on the stove.
- Remove from heat and let it cool.
- Beat in the eggs and add the sifted flour and baking powder. Mix until combined.
- Preheat the oven to 180°C. Line a baking tray with parchment paper.
- Pour the chocolate batter into the tray, smooth it out, and bake for about 25 minutes.
- Remove from the oven and let it cool.
Cheese Filling:
- Beat the butter with sugar until fluffy. Then add eggs, cheese, pudding mix, and pour in the heavy cream.
- Mix everything until combined.
Assembling the Cake:
- Cut the cooled cake into diagonal strips.
- Arrange the strips in a baking dish, removing every other one and setting them aside.
- Pour the cheese filling into the gaps. Then place the reserved strips on top and fill the remaining gaps with more cheese filling.
- Bake at 180°C for about 45-50 minutes.
