Ingredients

  • 4 eggs (at room temperature)
  • 200 ml of plain yogurt (at room temperature)
  • 60 g of erythritol or sugar (or more if you like it sweeter)
  • 150g of all-purpose flour or light spelt flour
  • 1 teaspoon of baking powder
  • Blueberries (to prevent them from sinking to the bottom like mine, toss them in potato starch)

Instructions

First, beat the eggs with the sugar until they form a fluffy mixture. They need to be really well beaten. Then, add the plain yogurt and mix it in. Slowly add the sifted flour and baking powder, stirring continuously. Finally, fold in the blueberries. Line your baking pan with parchment paper and pour in the batter. Pop it into a preheated oven at 180°C (350°F) for 45-50 minutes.
