Simple Two-Tone Apple Cake

Ingredients

  • For the Crumbly Crust:
  • 5 egg yolks
  • 3 cups of flour
  • 1 stick of butter
  • 1/3 cup of powdered sugar
  • 1 tablespoon of yogurt
  • 1 teaspoon of baking powder
  • For the Apples:
  • 8 apples
  • 1 tablespoon of sugar
  • 1.5 tablespoons of semolina
  • For the Sponge:
  • 5 egg whites
  • 1/3 cup or more of sugar
  • 1.7 ounces of all-purpose flour
  • 2.1 ounces of potato starch
  • Juice from 1/2 lemon
  • 1 teaspoon of baking powder
  • 1 tablespoon of cocoa powder

Instructions

For the apples: Dice the apples and sauté them in a pot. Mix in the semolina and let it cool.

For the crumbly crust: Knead the dough from the listed ingredients. Divide it in half. Line a baking pan with parchment paper and lay out one rolled-out portion of the dough.

For the sponge: Beat the egg whites until stiff, then add the sugar. Pour in the lemon juice. Add the sifted flours with baking powder and mix. Divide the sponge mixture in half. Add cocoa to one half. Spread the white mixture over the apples, then create patterns with the dark mixture.

Roll out the second portion of dough and gently place it over the dark mixture.

Bake the cake at 180 degrees Celsius (350 degrees Fahrenheit) for about 55 minutes. Once it's done, drizzle it with icing.
