Cottage Cheese Pastries with Peaches

Ingredients

  • 1 cup of flour (I used half wheat and half spelt)
  • 2 eggs
  • 1.5 teaspoons of baking powder
  • 2 teaspoons of pudding powder
  • 250g of cottage cheese or vanilla curd cheese
  • 2 tablespoons of erythritol or sugar
  • Peaches
  • Additionally: 1 egg for brushing before baking

Instructions

Start by crumbling the cottage cheese with a fork, then add the rest of the ingredients and knead until you get a smooth mixture. Roll it out into a rectangle, you can dust with flour if needed. Divide it into 8-10 pieces (rectangles). Cut strips on 4 pieces. Spread peaches on half of them and cover with the pieces with strips. Seal the edges with a fork. Brush with beaten egg.

Bake at 180 degrees Celsius (350 degrees Fahrenheit) for about 30 minutes (until golden brown).
