Maicena Cups with Chocolate and Coffee

Ingredients

  • 1 cup (250g) of milk or plant-based milk
  • 1/4 cup (50g) of coffee
  • 1 tablespoon (15g) of vanilla extract
  • 1/3 cup (50g) of cornstarch
  • 4 tablespoons (30g) of cocoa powder
  • 1/3 cup (80g) of sugar or sweetener to taste
  • 1/2 cup of coffee or milk. It can also be coffee with milk (1/4 cup of coffee + 1/4 cup of milk)
  • Marie biscuits

Instructions

  1. In a saucepan, combine the milk, coffee, and vanilla extract. Heat the mixture over medium heat until it starts to simmer, then remove it from the heat.
  2. In a separate bowl, mix the cornstarch, cocoa powder, and sugar until well combined.
  3. Slowly pour the warm milk mixture into the dry ingredients while whisking continuously to prevent lumps from forming.
  4. Return the mixture to the saucepan and place it back over medium heat. Cook, stirring constantly, until the mixture thickens and coats the back of a spoon, about 5-7 minutes.
  5. Once thickened, remove the mixture from the heat and let it cool slightly.
  6. Take your serving glasses or cups and place a layer of crushed Maria biscuits at the bottom of each.
  7. Pour the chocolate and coffee mixture over the biscuit layer, dividing it evenly among the cups.
  8. Refrigerate the cups for at least 2 hours, or until the mixture is set and firm.
  9. Before serving, you can garnish the tops with some additional crushed biscuits or a sprinkle of cocoa powder for extra flair.
