Triple Chocolate Tiramisu Cups
Ingredients
- 2 large egg yolks (about 28 grams each)
- 3 tablespoons of sugar (about 45 grams)
- 1 cup of mascarpone cheese (about 250 grams)
- 3 tablespoons of cocoa powder
- 1/2 cup of strong brewed coffee (about 120 milliliters)
- 1 teaspoon of almond extract
- Chocolate ladyfinger cookies
Instructions
- In a mixing bowl, whisk together the egg yolks and sugar until well combined and slightly thickened.
- Add the mascarpone cheese to the bowl and continue whisking until smooth and creamy.
- Stir in the cocoa powder until fully incorporated into the mascarpone mixture.
- In a shallow dish, pour the strong brewed coffee and add the almond extract. Mix well.
- Dip each chocolate ladyfinger cookie into the coffee mixture, ensuring they are fully soaked but not falling apart.
- Place a layer of soaked ladyfinger cookies at the bottom of each serving glass or cup.
- Spoon a layer of the mascarpone mixture over the soaked ladyfingers, covering them evenly.
- Repeat the layers with another layer of soaked ladyfingers followed by another layer of the mascarpone mixture.
- Optionally, sprinkle some cocoa powder on top for decoration.
- Refrigerate the tiramisu cups for at least 2 hours, or until set and chilled.
