Triple Chocolate Tiramisu Cups

Ingredients

  • 2 large egg yolks (about 28 grams each)
  • 3 tablespoons of sugar (about 45 grams)
  • 1 cup of mascarpone cheese (about 250 grams)
  • 3 tablespoons of cocoa powder
  • 1/2 cup of strong brewed coffee (about 120 milliliters)
  • 1 teaspoon of almond extract
  • Chocolate ladyfinger cookies

Instructions

  1. In a mixing bowl, whisk together the egg yolks and sugar until well combined and slightly thickened.
  2. Add the mascarpone cheese to the bowl and continue whisking until smooth and creamy.
  3. Stir in the cocoa powder until fully incorporated into the mascarpone mixture.
  4. In a shallow dish, pour the strong brewed coffee and add the almond extract. Mix well.
  5. Dip each chocolate ladyfinger cookie into the coffee mixture, ensuring they are fully soaked but not falling apart.
  6. Place a layer of soaked ladyfinger cookies at the bottom of each serving glass or cup.
  7. Spoon a layer of the mascarpone mixture over the soaked ladyfingers, covering them evenly.
  8. Repeat the layers with another layer of soaked ladyfingers followed by another layer of the mascarpone mixture.
  9. Optionally, sprinkle some cocoa powder on top for decoration.
  10. Refrigerate the tiramisu cups for at least 2 hours, or until set and chilled.
  11. Serve chilled and enjoy the rich, indulgent flavors of Triple Chocolate Tiramisu!
