Ingredients

  • 1 cup of grated cassava
  • 1 cup (140g) of grated coconut
  • 1/2 cup (90g) of ground country white cheese
  • 1/2 stick (80g) of butter
  • 1/2 cup (120g) of sugar
  • 50g of cane honey or molasses
  • 1 teaspoon of cinnamon
  • 1 teaspoon of anise
  • 1/2 tablespoon of baking powder

Instructions

  1. Preheat: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large mixing bowl, combine the grated cassava, grated coconut, ground white cheese, butter, sugar, cane honey or molasses, cinnamon, anise, and baking powder. Mix everything together until well combined.
  3. Prepare Pan: Grease a baking dish or pan with butter or cooking spray to prevent sticking.
  4. Bake: Pour the mixture into the prepared baking dish and spread it evenly.
  5. Bake Again: Place the dish in the preheated oven and bake for about 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  6. Cool and Serve: Once baked, remove the Enyucao from the oven and let it cool for a few minutes. Then, slice it into squares or bars and serve warm or at room temperature.
