Ingredients

  • 1 1/4 cups all-purpose flour (155g)
  • 2 teaspoons baking powder (10g)
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt (5g)
  • 1/2 cup melted butter (113g)
  • 2/3 cup brown sugar (130g)
  • 1/3 cup granulated sugar (55g)
  • 1 large egg (57g)
  • 1 egg yolk (15g)
  • 2 teaspoons vanilla extract (10g)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line an 8x8-inch baking pan with parchment paper and set it aside.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until well combined. Set aside.
  3. In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Mix until smooth and creamy.
  4. Add the egg, egg yolk, and vanilla extract to the butter-sugar mixture. Mix until well combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Pour half of the batter into the prepared baking pan and spread it evenly with a spatula.
  7. Spread a layer of guava paste or guava jam over the batter in the pan.
  8. Drop spoonfuls of softened cream cheese over the guava layer.
  9. Pour the remaining batter over the cream cheese and guava layer, spreading it out evenly.
  10. Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
  11. Allow the blondies to cool completely in the pan before slicing into squares and serving.
