Ingredients

  • Dough:
  • 3 1/2 cups of all-purpose flour
  • 1/2 cup of sugar
  • 2 1/4 teaspoons of rapid-rise yeast (standard package)
  • 1 teaspoon of cinnamon
  • 8 tablespoons of softened unsalted butter, cubed
  • 1/2 cup of warm milk
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • For frying: 6 cups of vegetable oil
  • Filling:
  • 3.4 oz box of vanilla pudding
  • 1 cup of milk
  • 1 cup of lemon curd
  • Zest of 1 lemon
  • Topping:
  • 1 cup of sugar

Instructions

  1. Dough: In the bowl of a stand mixer, combine flour, sugar, cinnamon, and rapid-rise yeast. Whisk together. Scatter the softened butter on top of the dry ingredients. In a separate mixing bowl, ensure the milk is at 110°F, then combine with eggs, vanilla extract, and salt. Whisk together and add to the dry ingredients. Using a dough hook attachment, beat for 10-12 minutes until the dough forms. With oiled hands, knead the dough into a ball for a couple of minutes. Place the dough into a greased bowl, cover with plastic wrap and a towel, and let it rise for 90 minutes in a warm place until it doubles in size. Punch the dough down and roll it out. Use a 3-inch cookie cutter to cut the dough and place it on a baking sheet. Cover and let it rise for an additional 30 minutes.
  2. Prepare Oil: While the dough is rising, heat vegetable oil in a pot to 345°F.
  3. Make Filling: Combine instant pudding with milk until thickened. Stir in lemon curd and lemon zest.
  4. Frying: Fry the donuts for about 2 minutes on each side until golden brown.
  5. Topping: Coat the donuts in sugar and fill them with lemon curd filling. Enjoy these delightful treats! 🍋🍩
