MARS Cheesecake

Ingredients

  • CRUST:
  • 🤎 250 g cocoa biscuits
  • 🤎 100 g butter
  • CHEESECAKE FILLING:
  • 🤎 800 g ground cottage cheese (I used Piątnica from a bucket)
  • 🤎 5 eggs
  • 🤎 150 ml heavy cream (30%)
  • 🤎 300 g dulce de leche
  • 🤎 60 g sugar
  • 🤎 1 tablespoon vanilla sugar
  • 🤎 40 g wheat flour
  • *️⃣ All ingredients at room temperature.
  • TOPPING:
  • 🤎 200 g dulce de leche
  • 🤎 100 g milk chocolate
  • 🤎 60 ml heavy cream (30%)
  • 🤎 2 Mars bars for decoration

Instructions

    Line the 24 cm cake tin with parchment paper.
    Crush the cocoa biscuits into powder, mix in melted butter. Spread onto the bottom of the cake tin and press down. Chill in the fridge.
    Preheat the oven to 160°C (320°F) top and bottom heat.
    Transfer all the ingredients for the cheesecake filling into a mixing bowl and mix until combined. Pour onto the biscuit base.
    Place a dish with boiling water on the bottom oven rack and place the cheesecake on the middle rack. Bake for 1 hour and 15 minutes. After baking, turn off the oven, crack the door open, and let it cool down inside. Then refrigerate for at least 8 hours, preferably overnight.
    Once chilled, spread dulce de leche over the cheesecake.
    Heat the heavy cream until hot, then add broken chocolate and stir until melted. Let the chocolate mixture cool down, then pour over the cheesecake (I put it in the fridge before pouring to thicken it and prevent it from running off the cheesecake).
