These lemon blondies have become a staple in my household, especially during the spring season! They're a breeze to whip up and require hardly any cleanup—what's not to love? They'll be out of the oven in about 15-18 minutes, leaving you with moist, soft blondies that are bursting with lemony goodness! Here's how to make them:

Ingredients

  • Blondie:
  • 8 tablespoons of melted unsalted butter, cooled slightly
  • 1/2 cup of sugar
  • 1/4 cup of powdered sugar
  • 2 eggs at room temperature
  • Zest of 2 medium lemons
  • Juice of 1 lemon
  • 1 1/2 teaspoons of vanilla extract
  • 1/2 teaspoon of almond extract
  • 1 cup of all-purpose flour
  • Icing:
  • 1 cup of powdered sugar
  • 1 teaspoon of vanilla extract
  • Juice of 1 lemon
  • Zest of 1 lemon

Instructions

  • Preheat your oven to 350°F and grease an 8x8 baking dish lined with parchment paper.
  • In a medium bowl, whisk together the melted butter and sugars.
  • Add the eggs, lemon zest, lemon juice, and extracts to the bowl, and whisk until well combined.
  • Slowly add the flour and fold it into the wet ingredients until fully incorporated.
  • Bake for 15-18 minutes until the edges are slightly more cooked than the center—avoid overbaking.
  • Once out of the oven, let them cool for 30 minutes.
  • To make the glaze, mix together powdered sugar, lemon juice, vanilla extract, and lemon zest. Pour it over the cooled blondies, let it set, and enjoy the tangy sweetness!
