These lemon blondies have become a staple in my household, especially during the spring season! They're a breeze to whip up and require hardly any cleanup—what's not to love? They'll be out of the oven in about 15-18 minutes, leaving you with moist, soft blondies that are bursting with lemony goodness! Here's how to make them:
Ingredients
- Blondie:
- 8 tablespoons of melted unsalted butter, cooled slightly
- 1/2 cup of sugar
- 1/4 cup of powdered sugar
- 2 eggs at room temperature
- Zest of 2 medium lemons
- Juice of 1 lemon
- 1 1/2 teaspoons of vanilla extract
- 1/2 teaspoon of almond extract
- 1 cup of all-purpose flour
- Icing:
- 1 cup of powdered sugar
- 1 teaspoon of vanilla extract
- Juice of 1 lemon
- Zest of 1 lemon
Instructions
- Preheat your oven to 350°F and grease an 8x8 baking dish lined with parchment paper.
- In a medium bowl, whisk together the melted butter and sugars.
- Add the eggs, lemon zest, lemon juice, and extracts to the bowl, and whisk until well combined.
- Slowly add the flour and fold it into the wet ingredients until fully incorporated.
- Bake for 15-18 minutes until the edges are slightly more cooked than the center—avoid overbaking.
- Once out of the oven, let them cool for 30 minutes.
