Soft and Fluffy COCONUT CHOCOLATE MUFFINS

Ingredients

  • Cream Cheese Balls:
  • 200g cream cheese
  • 100g shredded coconut
  • 1 egg white
  • 1 pack of vanilla sugar
  • 2 tablespoons sugar
  • For the Batter:
  • 4 eggs + 1 egg yolk
  • 200g sugar
  • 1 pack of vanilla sugar
  • 200ml milk
  • 200ml oil
  • 250g flour
  • 4 tablespoons cocoa
  • 1 pack of baking powder

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. In a bowl, prepare the cream cheese balls by combining cream cheese, shredded coconut, egg white, vanilla sugar, and sugar. Mix until well blended.
  3. For the batter, beat together eggs, egg yolk, sugar, and vanilla sugar until creamy. Add milk and oil, continuing to mix.
  4. Gradually fold in flour, cocoa, and baking powder until a smooth batter forms.
  5. Fill muffin cups halfway with the batter. Place a cream cheese ball in the center of each cup, pressing it down slightly.
  6. Bake in the preheated oven for approximately 20-25 minutes or until a toothpick inserted comes out clean.
  7. Allow the muffins to cool before serving. Enjoy these soft and fluffy coconut chocolate muffins that disappear in no time! 🥥
