Soft and Fluffy COCONUT CHOCOLATE MUFFINS
Ingredients
- Cream Cheese Balls:
- 200g cream cheese
- 100g shredded coconut
- 1 egg white
- 1 pack of vanilla sugar
- 2 tablespoons sugar
- For the Batter:
- 4 eggs + 1 egg yolk
- 200g sugar
- 1 pack of vanilla sugar
- 200ml milk
- 200ml oil
- 250g flour
- 4 tablespoons cocoa
- 1 pack of baking powder
Instructions
- Preheat your oven to 180°C (356°F).
- In a bowl, prepare the cream cheese balls by combining cream cheese, shredded coconut, egg white, vanilla sugar, and sugar. Mix until well blended.
- For the batter, beat together eggs, egg yolk, sugar, and vanilla sugar until creamy. Add milk and oil, continuing to mix.
- Gradually fold in flour, cocoa, and baking powder until a smooth batter forms.
- Fill muffin cups halfway with the batter. Place a cream cheese ball in the center of each cup, pressing it down slightly.
- Bake in the preheated oven for approximately 20-25 minutes or until a toothpick inserted comes out clean.
