Lemon Crumb Cake
Ingredients
- For the Batter:
- 3 eggs
- 250g sugar
- 1 pack of vanilla sugar
- 250ml milk
- 100ml oil
- Juice of 2 lemons
- 1 pack of baking powder
- 350g flour
- For the Crumb Topping:
- 100g butter
- 100g sugar
- 250g flour
- A dash of lemon juice
- For the Glaze:
- 100g powdered sugar
- A bit of lemon juice
Instructions
- Preheat your oven to 170°C (338°F).
- In a mixing bowl, beat together eggs, sugar, and vanilla sugar until creamy.
- Add milk, oil, lemon juice, baking powder, and flour to the mixture. Blend until you have a smooth batter.
- Pour the batter into a greased baking pan, spreading it evenly.
- For the crumb topping, mix butter, sugar, flour, and a dash of lemon juice until it forms crumbly texture. Sprinkle this evenly over the batter.
- Bake in the preheated oven for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.
- While the cake is cooling, prepare the glaze by mixing powdered sugar with a bit of lemon juice. Drizzle it over the cooled cake.
