Lemon Crumb Cake

Ingredients

  • For the Batter:
  • 3 eggs
  • 250g sugar
  • 1 pack of vanilla sugar
  • 250ml milk
  • 100ml oil
  • Juice of 2 lemons
  • 1 pack of baking powder
  • 350g flour
  • For the Crumb Topping:
  • 100g butter
  • 100g sugar
  • 250g flour
  • A dash of lemon juice
  • For the Glaze:
  • 100g powdered sugar
  • A bit of lemon juice

Instructions

  1. Preheat your oven to 170°C (338°F).
  2. In a mixing bowl, beat together eggs, sugar, and vanilla sugar until creamy.
  3. Add milk, oil, lemon juice, baking powder, and flour to the mixture. Blend until you have a smooth batter.
  4. Pour the batter into a greased baking pan, spreading it evenly.
  5. For the crumb topping, mix butter, sugar, flour, and a dash of lemon juice until it forms crumbly texture. Sprinkle this evenly over the batter.
  6. Bake in the preheated oven for approximately 40 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is cooling, prepare the glaze by mixing powdered sugar with a bit of lemon juice. Drizzle it over the cooled cake.
  8. Slice, serve, and enjoy the zesty goodness of your homemade Lemon Crumb Cake!
