Get ready for these amazing cocoa brownies loaded with toasted pecans, chocolate chips, and swirled with my homemade rich salted caramel sauce. They’re a taste of heaven! If you’re a fan of those classic “Turtles” chocolates, these are right up your alley!

Ingredients

  • 2 large eggs at room temperature
  • 1 cup of granulated sugar (about 200g)
  • 1 teaspoon of pure vanilla extract (5ml)
  • 10 tablespoons of salted butter (around 140g)
  • ½ cup of icing sugar (60g)
  • ⅔ cup of cocoa powder (56g)
  • ¼ teaspoon of salt
  • ½ cup of all-purpose flour (71g)
  • ½ cup of dark chocolate chips (or bittersweet callets) plus extra for topping (85g)
  • ½ cup of chopped pecans plus extra for topping (around 60g)
  • Salted Caramel Sauce

Instructions

Preheat your oven to 350°F. Line an 8×8-inch metal baking pan with parchment paper, making sure to leave a bit of an overhang on all sides.

First, grab a mixing bowl and blend together the eggs, granulated sugar, and vanilla until they get creamy and turn a lovely lemon color. A hand mixer works great for this too.

While that’s mixing, get a saucepan and melt the butter until it’s completely melted and super hot (you'll hear it crackling). Take it off the heat and stir in the icing sugar, cocoa powder, and salt until it's all smooth.

When your egg mix is looking pale and thick, add that warm cocoa mix in and beat it until everything is smooth and shiny. Toss in the flour, fold it in until it's smooth and glossy—like thick hot fudge. Then, gently fold in those chocolate chips and toasted pecans.

Pour this amazing batter into your prepared pan and bake it for about 20-25 minutes. Keep an eye on it! You want a toothpick to come out with some moist crumbs attached, not clean. Don't over-bake or they'll dry out.

Let your brownies cool in the pan on a wire rack, then chill 'em in the fridge for at least an hour before cutting them into squares.

Once they're totally cool, drizzle that Salted Caramel Sauce all over and sprinkle on some extra pecans and chocolate chips. Enjoy the deliciousness!
