Homemade pudding pastries

 

Ingredients for the dough:

  • 2 packets of dry yeast
  • 200ml lukewarm milk
  • 200ml lukewarm water
  • 100g sugar
  • 50ml oil
  • 50g melted butter
  • 2 egg whites {Egg yolks for brushing}
  • Approximately 850-900g flour
  • 1 teaspoon salt

Ingredients for the pudding:

  • 750ml milk
  • 150g sugar
  • Vanilla extract
  • 2 packets of vanilla pudding powder
  • 50g melted butter

1 egg yolk

Instructions:

For the Dough:

  1. In a bowl, mix the dry yeast with lukewarm milk and water until dissolved.
  2. Add sugar, oil, melted butter, and egg whites to the yeast mixture. Mix well.
  3. Gradually add flour while mixing until a soft dough forms.
  4. Knead the dough on a floured surface until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

For the Pudding:

  1. In a saucepan, heat milk over medium heat until warm.
  2. In a separate bowl, mix sugar, vanilla extract, and vanilla pudding powder.
  3. Gradually whisk the dry ingredients into the warm milk until smooth.
  4. Cook the mixture over medium heat, stirring constantly, until it thickens into a pudding consistency.
  5. Remove from heat and stir in melted butter. Let the pudding cool slightly.

Assembling the Pudding Pastries:

  1. Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  2. Punch down the risen dough and divide it into equal portions.
  3. Roll out each portion of dough into a circle or rectangle shape.
  4. Spoon some pudding onto the center of each piece of dough, leaving space around the edges.
  5. Fold the edges of the dough over the pudding to create a pastry pocket.
  6. Brush the tops of the pastries with beaten egg yolks for a golden finish.
  7. Place the pastries on the prepared baking sheet and bake in the preheated oven for 15-20 minutes or until golden brown.
  8. Once baked, allow the pastries to cool slightly before serving.
