Hazelnut Dream Cake

Ingredients

  • 4 eggs (at room temperature)
  • 1 cup plus 2 tablespoons (250g) sugar
  • Vanilla extract
  • A pinch of cinnamon
  • 1 2/3 cups (400ml) heavy cream
  • 1 packet baking powder
  • 1/2 cup (50g) chopped hazelnuts
  • 1 cup (100g) ground hazelnuts
  • 2 1/2 cups (300g) all-purpose flour
  • Additional:
  • Light hazelnut cream
  • Chopped hazelnuts

Instructions

  1. Preheat your oven to 340°F (170°C).
  2. In a mixing bowl, beat the eggs with sugar until creamy.
  3. Add a few drops of vanilla extract and a pinch of cinnamon to the mixture.
  4. Pour in the heavy cream and continue mixing.
  5. Gradually add the baking powder, chopped hazelnuts, ground hazelnuts, and flour. Mix until well combined.
  6. Pour the batter into a greased baking pan.
  7. Bake in the preheated oven for about 40 minutes or until a toothpick inserted into the center comes out clean.
  8. Once baked, let the cake cool.
  9. Spread a layer of light hazelnut cream on top and sprinkle with chopped hazelnuts for garnish.
  10. Slice and enjoy your quick hazelnut cake!
