Coconut Chocolate Surprise Muffins

Ingredients

  • For the Cream Cheese Balls:
  • 7 ounces cream cheese
  • 1 cup shredded coconut
  • 1 egg white
  • 1 packet vanilla sugar
  • 2 tablespoons sugar
  • For the Batter:
  • 4 eggs + 1 egg yolk
  • 1 cup sugar
  • 1 packet vanilla sugar
  • 3/4 cup milk
  • 3/4 cup oil
  • 2 cups all-purpose flour
  • 4 tablespoons cocoa powder
  • 1 packet baking powder

Instructions

  1. Preheat the oven to 350°F (175°C). Grease or line muffin tins with paper liners.
  2. In a bowl, mix together the cream cheese, shredded coconut, egg white, vanilla sugar, and sugar until well combined. Roll the mixture into small balls and set aside.
  3. In another bowl, beat the eggs and egg yolk with the sugar and vanilla sugar until creamy.
  4. Add the milk and oil to the egg mixture and mix well.
  5. Sift the flour, cocoa powder, and baking powder into the wet ingredients and stir until just combined.
  6. Fill each muffin cup halfway with the batter.
  7. Place a cream cheese ball in the center of each muffin cup, pressing it gently into the batter.
  8. Top each muffin with the remaining batter until the cream cheese ball is covered.
  9. Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the muffins comes out clean.
  10. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delicious coconut chocolate muffins!
