Light, Delicate Cheesecake with Erythritol

Ingredients

  • 2.2 lbs (1 kg) ground cottage cheese
  • 1 cup of milk
  • 2 packets of sugar-free pudding mix
  • 5 eggs
  • 6 tablespoons of xylitol/erythritol (add more if you like it sweeter - you can use xylitol or sugar)
  • Plus: raspberries (I used frozen ones 😋)

Instructions

    Separate the egg yolks from the whites. In a bowl, mix together the ground cottage cheese, milk, pudding mixes, previously separated egg yolks, and erythritol.
    👉Blend everything until smooth. In a separate bowl, beat the egg whites until stiff peaks form.
    👉Gently fold the beaten egg whites into the cheese mixture ♥️
    Pour the cheesecake mixture into a springform pan. Arrange the fruits on top.
    Bake at 170°C (350°F) for about 55-60 minutes 🥰 After baking, slightly open the oven door and leave the cheesecake inside for about 30 minutes👍
