Fluffy, Quick Apple Cake

Ingredients

  • 4 large eggs (best at room temperature)
  • 7 tablespoons of melted butter
  • 6 tablespoons of sugar (or more if you like it sweeter)
  • 1 cup of all-purpose flour
  • 1/2 cup of rice or potato flour
  • 1 teaspoon of baking powder
  • For the glaze: powdered sugar and lemon juice
  • Plus: 1 chopped apple

Instructions

    Melt the butter and set it aside. In a bowl, crack the eggs, add sugar, and beat for about 10 minutes until you get a pale and fluffy mixture. In another bowl, sift the all-purpose flour along with the rice or potato flour and baking powder, then mix. Add the flour mixture to the beaten eggs and mix briefly on low speed until combined. Pour in the melted butter and mix. Pour the batter into a loaf pan. Arrange apple slices on top of the batter. Pop it in the oven. Bake for about 50 minutes at 350°F (180°C) (until a toothpick comes out clean). After baking, drizzle with glaze.
