Delicious Flourless Bread
Ingredients
- 2 cups (500 ml) yogurt
- 3 cups (300 g) rolled oats
- 1 cup favorite seeds
- 1 tablespoon honey
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 tablespoon chia seeds
- 2 tablespoons flaxseed
- Cottage cheese and tuna spread:
- 1 cup (250 g) cottage cheese
- 1/2 can tuna in its own juice
- 1 tablespoon yogurt or sour cream
- Salt, pepper
- Red onion
- Chives
Instructions
- Preparation: Preheat your oven to 375°F (190°C). Line a baking pan with parchment paper.
- Mixing: In a large mixing bowl, combine 2 cups (500 ml) of yogurt, 3 cups (300 g) of rolled oats, 1 cup of your favorite seeds (such as pumpkin seeds, sunflower seeds, or sesame seeds), 1 tablespoon of honey, 1 teaspoon of salt, 1 teaspoon of baking soda, 1 tablespoon of chia seeds, and 2 tablespoons of flaxseed. Stir everything together until well combined.
- Forming the Bread: Transfer the mixture into the prepared baking pan. Press it down firmly and evenly using a spatula or the back of a spoon. This step is important to ensure the bread holds its shape.
- Baking: Place the baking pan in the preheated oven and bake for about 1 hour, or until the bread is nicely golden brown on top. Keep an eye on it as baking times may vary slightly depending on your oven.
- Cooling: Once baked, remove the bread from the oven and let it cool in the pan for a few minutes. Then, transfer it to a wire rack to cool completely before slicing.
cottage cheese and tuna spread:
- Preparation: Finely chop half a red onion and some chives (if using).
- Preparation of Tuna: Drain half a can of tuna in water or oil and place it in a mixing bowl.
- Mixing: Add 1 cup (250 g) of cottage cheese to the bowl with the tuna. Then, add 1 tablespoon of yogurt or sour cream for creaminess.
- Seasoning: Season the mixture with salt and pepper to taste. You can also add a squeeze of lemon juice for extra freshness, if desired.
- Adding Aromatics: Mix in the finely chopped red onion and chives for added flavor and texture.
- Mixing and Mashing: Stir all the ingredients together until well combined. Use a fork or potato masher to mash the mixture slightly, ensuring the ingredients are evenly distributed and the spread reaches your desired consistency.
- Adjusting Consistency: If the spread is too thick, you can add a little more yogurt or sour cream to reach your preferred consistency.
- Taste Test: Taste the spread and adjust the seasoning if necessary, adding more salt, pepper, or lemon juice according to your taste.
- Serving: Once the spread is well mixed and seasoned to your liking, transfer it to a serving bowl. Garnish with additional chopped chives, if desired.
