Quick and Delicious Apple Cake
Ingredients
- 📍 4 large eggs (best at room temperature)
- 📍 200 g melted butter
- 📍 6 tablespoons sugar (or more if you like it sweeter)
- 📍 1 cup all-purpose flour
- 📍 1/2 cup rice or potato flour
- 📍 1 teaspoon baking powder
- 📍 For the glaze: powdered sugar and lemon juice
- Plus: 1 chopped apple
Instructions
Melt the butter and set it aside. In a bowl, crack the eggs, add sugar, and beat for about 10 minutes until it's light and fluffy. In another bowl, sift together the all-purpose flour, rice or potato flour, and baking powder, then mix. Add the flour mixture to the beaten eggs and mix briefly on low speed until everything is combined. Pour in the melted butter and mix it in. Pour the batter into a loaf pan. Arrange the chopped apple pieces on top of the batter. Pop it in the oven. Bake for about 50 minutes at 180 degrees Celsius (until a toothpick comes out clean). Once baked, drizzle with the glaze.
