Delicious Christmas Cake


  • For the cake:
  • 5 eggs
  • 150g of all-purpose flour
  • 150g of granulated sugar
  • 1 tbsp of vanilla extract
  • For the baba de Moça:
  • 1 can of condensed milk
  • 1 bottle of coconut milk (200ml)
  • 3 egg yolks
  • Plus crushed walnuts for filling
  • For the marshmallow:
  • 250 grams of sugar
  • 60 ml of water
  • 125 grams of egg whites


For the cake:
In a stand mixer, beat the eggs until they double in volume, then add the sugar and beat until you get a homogeneous mixture. Turn off the mixer and gently fold in the flour.
Bake in a preheated oven at 350°F (180°C) in a 20cm round cake pan for approximately 35 minutes, or divide the batter into three 17cm diameter pans and bake for about 15-20 minutes. Remove from the oven and let it cool.

For the baba de Moça:
In a saucepan, mix the condensed milk, coconut milk, and egg yolks, then cook over low heat, stirring constantly, until it thickens and pulls away from the sides of the pan (about 10 minutes). Remove from heat and let it cool.

For the marshmallow:
In a saucepan, combine the water and sugar and bring to a boil. Let it reach 248°F (120°C), the hard ball stage.
When the syrup reaches 230°F (110°C), start beating the egg whites in a stand mixer.
Once the syrup reaches 248°F (120°C), pour it in a thin stream into the egg whites while continuing to beat until the meringue is glossy and the bowl of the mixer is completely cool.

Assembly: Layer the cake and baba de moça alternately in the pan. After the last layer of cake, freeze for 3 hours. Then, spread the marshmallow on top. Decorate with marshmallow and baba de moça. Enjoy!
